The Mushroom King had lots of different mushrooms, but I wanted the cremini to make a dish to pack on loads of calories, protein and dietary fiber. I never had it before with mushrooms, only avocado.
Ten years ago I went vegan and in one month lost ten pounds I did not need to lose. I was scared, one women, a skinny woman, started calling out to the others who had come to take my Stretch and Balance class: “Look at Jann, she’s so skinny!” I was devastated and to make it worse, I had the class face the tennis courts and windows while I faced the mirror. I saw myself; I wore leggings then; black leggings accentuated my lean legs.
After class a couple of caring folks came up and asked if I was okay and I assured them I was. That was a lie. I knew I had to make a change and called a friend who promptly told me I had not figured in the loss of calories when the daily cheese was no longer an option. So, I set out to find a high calorie meal and bought the ingredients and after donating seven pairs of black leggings, I made the following.
So, after scrubbing the countertops and washing your hands, set out everything in the order of use. Mise en place. And set that good food mood and get cooking.
Supplies:
Pot with lid, skillet, strainer, potholder, towel, love, patience, spoon rest, chef’s knife, cooking and eating utensils, bowl. Cutting board.
Ingredients:
>>Liquids: milk of choice, I used oat milk. The obvious water to boil the pasta
>>Pasta: chef’s choice. I used edamame, mung bean, spirulina fettucine for its taste, 24 grams of protein and 14 grams of dietary fiber
>>Veggies: avocado and I added cremini mushrooms
>>Spices: mineral salt, black pepper, nutritional yeast to add B vitamins, protein, dietary fiber and thickening
Recipe:
As the water is boiling, chop the mushrooms and slice the avocado. Add pasta to the boiling water and clean up any mess. Heat the skillet and add in the creminis. When the pasta is al dente, strain it. Dump the water and add a small amount of milk of choice to the hot pot, add spices, avocado, mushrooms, and pasta and keep stirring.
Dish up this thick bowl of love and good fat. Find your calm spot and take in how your senses are responding and remember to give gratitude. Enjoy!
